Two Restaurants you need to visit in Scandinavia

Noma, Copenhagen, Denmark

Perhaps the most wellknown and most talked-about restaurant in Scandinavia is Noma. Since the reopening in 2018, Noma has changed the way they work with the seasons and divided them into three different seasons a year. During the different seasons they only serve what is significant for each season.

From January 9th- June 1st it's seafood season.

Vegetable season is June 25th- Sebtember 21st.

Game& Forest season is October 15th- December 21st.

Along with the different season the menu will dramaticlly change but the sublime quality will not. Noma is a progressive and simply fascinating restaurant and is a must to visit if you are a true gourmét. To understand the hype around the restaurant you might want to watch the documentary from 2015: Noma, My Perfect Storm.

Maaemo - Oslo, Norway

" I want my cooking to reflect the rugged nature and climate of Norway. I want to create a progressive anvironment that has emphasis on the outstanding produce of our region". This quote is from Head chef Esben Holmboe Bang at restaurant Maaemo. The word maaemo is an old norse word meaning Mother Earth and the restaurants concept is focused around that, by creating a narrative around the clean and bright flavours of Norway. Maaemo was awarded a third Michelinstar in 2016 and became the first Norwegian restaurant ever to hold Guide Michelin's highest accolade.
